
This year I don’t have the time nor energy to create and send out invitations for Little Monkey’s 3rd birthday party. It really was a last minute decision since we will be out of town at my parents’ house. As luck would have it, I was contacted by MyPunchbowl to let my readers know about their Grand Prize Giveaway, as well as a little bonus for my readers. Ingredients:
- 2 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 3/4 cup vegetable oil
- 1 ½ cup sugar
- 2 tsp vanilla extract
- 2 2/3 cup shredded carrots
- Vanilla frosting
- 1 bag Cadbury mini chocolate Easter eggs
Combine flour, baking powder, and salt in a medium-sized bowl and mix well. In a separate large bowl, mix the eggs, vegetable oil, vanilla extract, and sugar. Add the flour mixture and carrots to the large bowl and mix well. Pour the muffin mix into mini muffin pans. Bake at 350F degrees for about 15 minutes or until the muffins are cooked. Once the muffins have cooled, frost them with vanilla frosting and decorate each of them with a few mini chocolate Easter eggs, jelly beans, or peeps.
