Valentine’s Cookies!

Darlene at The Cookie Boutique is offering yummy cookies for one Busy Mom reader for Valentine’s Day! She has now added an online store to her site to make ordering quick and easy. And one of her new yummy additions are biscottis! I ordered myself a biscotti sampler which has all three flavors (4 pieces of each flavor) because I just couldn’t decide which flavor I wanted, so I figured a sampler would be my best option. It is the three different flavors: brownie, chocolate chip, and cinnamon sugar.

Here are the yummy cookies she’s giving away. It includes all different sizes of Valentine’s cookies including the large 6 inch down to the petite 2 inch.

Confessions of a Teen Idol

Okay, okay – I admit it…I am a reality show junkie. No I don’t watch all of them. Just certain ones appeal to me. A friend of mine mentioned Confessions of a Teen Idol and I decided to take a peek last night. It is a project by Scott Baio. Yes, I did watch Scott Baio is 46…and pregnant. I did enjoy it! Anyways, the former teen idols are Chris Atkins from The Blue Lagoon, David Chokachi from Baywatch, Billy Hufsey from Fame, Jeremy Jackson from Baywatch, Eric Nies from The Real World 1st Season, Jamie Walters from Beverly Hills 90210, and Adrian Zmed from T.J. Hooker. It is certainly interesting. I can’t imagine what it is like to go from extremely popular to practically an unknown. Thanks to episode #104. (Here’s the synopsis :In an effort to reclaim their lost fame, the guys take a walk through Paparazzi Alley in Beverly Hills to attract attention and have their photos taken. Getting media attention in the ‘New’ Hollywood is more than one idol bargained for, and after a tough therapy session with Cooper Lawrence, they are not sure if they are going to make it through the rest of this journey, but a visit from Scott Baio convinces them to stick it out. Next, the guys are given 24 hours to put together a play for underprivileged kids in an exercise designed to remind them of what they love about performing. The guys are nervous to entertain this eager audience, but they are reminded of why they got into the business in the first place.) Any attraction that I had to Eric Nies went out the window with using his urine to make his hair shiny. Blegh! I don’t care how many other places in the world do that normally…ewww ewww EWWW! Jeremy Jackson seems to be a loose cannon. He seems to be a bit of a media hound. I’m thinking he might need to know who he is better before jumping into the media spotlight. Especially seeing that he is a recovering drug addict. Jamie, Jamie, Jamie…oh he was so cute back in the day. Now he seems to want to rebel from anything mainstream with the tattoo sleeves on his arms and shaving his beautiful hair. But he seems to be a little bit bitter with Hollywood still. David Chokachi seemed like the only level-headed likable guy out of the bunch. So who knows what will happen with all these guys. I wish them luck! Pistachios Awesome pistachios!

I love pistachios – there’s something about cracking them open and popping them in your mouth that is comforting. Maybe having to crack them open is one of those great benefits to slowing me down and eating too many as I do with other things. Sunkist is the only Pistachio company that I had ever heard of. But last week I was given the opportunity to try out pistachios from Everybody’s Nuts! and Wonderful Pistachios from Paramount Farms. I tasted the Wonderful Pistachios Roasted & Salted flavor. It was delicious. This definitely gives regular pistachios a nice touch. Then I tasted Everybody’s Nuts! in the Salt & Pepper flavor (they have 3 more flavors – South of the Border, European Roast, and Roasted No Salt) and I was in love. The Salt & Pepper has a little kick to it with the garlic powder and onion powder, but I think that was the best addition to it. My father said it made it taste more like a meal and felt more filling too him. He already had me look up where he could buy more of the Everybody’s Nuts! You can buy them online by the case or you can find where they carry them in your neighborhood by using the store locator.

Chocolate Pistachio Biscotti by Sofia at Skinny Kitchen
If you have a weakness for something sweet with your coffee, you’re not the only one. When I’m enjoying my Sunday morning cup of joe in bed or having some friends over for afternoon tea, I serve my famous chocolate pistachio biscotti. Everyone always asks me for the recipe, which I take as a big compliment. So here it is, my skinny biscotti. Enjoy responsibly — the serving size is one piece, not five!

Ingredients:
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/3 cup sugar
1/3 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 egg whites
1 whole egg
3 tablespoons Earth Balance butter(or another brand with low saturated fat)
2 tablespoons orange juice
1 teaspoon vanilla extract
1/4 cup chocolate chips
1/2 cup pistachios
1/3 cup slivered almonds
Grated zest of 1 lemon
1 tablespoon cinnamon
1 tablespoon brown sugar

Directions:
Heat oven to 350° F. Line a baking sheet with parchment paper and set aside. Combine the flours, first two sugars, baking soda, baking powder, and salt in a medium-sized bowl. Whisk with a fork until mixed. Add the eggs, butter, orange juice, and vanilla extract and beat with a mixer on medium speed until dough forms, about one minute. Stir in chocolate chips, pistachios, almonds, and grated lemon zest and mix until incorporated, about 20 seconds. Transfer dough to the baking sheet and form it into a long, flat log about 12 inches long and 1 inch thick. Sprinkle with the cinnamon and remaining brown sugar.* Bake until brown and firm, about 23 to 26 minutes. Remove from oven and cool 10 minutes. Slice loaf into 1/4 inch thick slices. Arrange biscotti on 2 baking sheets so that they lie flat on one of the freshly-cut sides. Return to oven and bake about 6 minutes. Then turn them over and bake on other side for another 6 minutes until lightly toasted. For a crunchier biscotti, bake an additional 5 minutes. Cool. Store in an airtight container or freeze for up to three weeks.

*You can also add your favorite toppings such as coconut, cocoa, nutmeg, craisins, almond extract, etcNutrition content: Per serving (1 biscotti): 65 calories, 2.5 g fat, 9 g carbohydrate, .5 g fiber, 1 g protein

I’m not ready to go!!!

Of course, I miss my hubby but it has been nice to have the extra help. We will be leaving this weekend. So sad. Back to my lonely little world in Maryland. I always start freaking out a while before I leave. This trip has definitely been lots of fun with my family. As you may already know we want to sell our house this year (Don’t laugh…I know, I know the market sucks, but I can dream can’t I?!) so hopefully we won’t have too much longer left in Maryland, but I am thinking that this time when I go back I should make the best of it. I have been too much of a hermit with the Little Monkey. I was a part of a playgroup that went south a little during the last few months of last year – hopefully this year it will do better. All of the Army wives that I was close to have moved in the last few months. That is what stinks about the Army, but I am glad are no longer a part of that world. Time to make new friends.

I am still learning my way through Entrecard, but I am having fun, too. I was resistant at first as I am with many new things. I just kept coming across them on other people’s blogs and figured I would check it out.

What is Entrecard?

Tax Time

I know Taxes aren’t due until April, but we never wait that long. Our taxes are usually done by the end of January or at by mid-February. My hubby is ready to get our taxes filed, but is waiting for me to get home from my vacation in Florida. I’m sure it is probably killing him to wait on it. icon smile Tax Time Ha ha. I know the one and ONLY big purchase we are going to get is a Garmin nüvi® 250W. My mom got my dad one for Christmas and it is the greatest thing ever! We needed that thing badly when we were driving from Maryland to Florida! We were looking for a Chick-fil-a in the worst way between South Carolina and Georgia with a screaming toddler in the backseat. Chick-fil-a has the only play areas that my hubby doesn’t cringe at the thought of Little Monkey playing in it. This amazing little device can find and direct you to the nearest Chick-fil-a!!! And the nearest ATM, grocery stores, lodging, car washes, bowling centers, rest areas, airports, gas stations, library, hospitals, golf courses and parking lots (like Disney’s or Metro Stations in DC). And my dad says the most important thing for him is that no matter where he is at he can hit the home button and it will get him back to the house.

Do you file your taxes as soon as possible, at a decent time, or wait until the last minute? Are you planning any big purchases with your tax return?

Yes, my aunt is younger than me. Weird I know, but she is 3 1/2 years younger than me. My Little Monkey did so good with her baby. He wasn’t jealous or anything! He was curious about N. It almost makes me want another baby, but then N spewed his formula up all over my pants and that moment went out the window.
